Instructions:

1. Brown the Pork:

Heat oil in a large pot over medium-high heat.

Season pork cubes with salt and pepper.

Sear pork in batches until browned on all sides (about 5–7 minutes). Remove and set aside.

2. Sauté Aromatics:

In the same pot, add onions and cook until softened (about 5 minutes).

Stir in garlic and cook for 1 minute until fragrant.

3. Build the Chili Base:

Add green chiles and tomatoes, stirring to combine.

Sprinkle in cumin, oregano, and smoked paprika. Cook for 2 minutes to bloom the spices.

4. Simmer the Chili:

Return pork to the pot.

Pour in chicken broth and water.

Bring to a boil, then reduce heat to low and simmer uncovered for 1.5–2 hours, stirring occasionally.

5. Thicken (Optional):

For a thicker chili, whisk flour with a bit of water to make a slurry, then stir into the pot during the last 15 minutes of cooking.

6. Finish & Serve:

Stir in lime juice if desired.

Taste and adjust seasoning.

Garnish with cilantro, cheese, and serve with warm tortillas.
