Colorado Style Green Chili

A hearty and flavorful Mexican-inspired stew made with tender pork, fire-roasted green chiles, tomatoes, and spices. Perfect for warming up on a chilly day!

Ingredients:

For the Chili:

2 lbs pork shoulder or pork butt, cut into small cubes

2 tbsp vegetable oil

1 large onion, diced

4 cloves garlic, minced

2 cups roasted green chiles, peeled and chopped (Hatch or Anaheim recommended)

2 medium tomatoes, diced (or 1 can diced tomatoes, drained)

4 cups chicken broth

1 cup water (or more as needed)

1 tsp ground cumin

1 tsp oregano

1/2 tsp smoked paprika

Salt and pepper, to taste

1/4 cup flour (optional, for thickening)

1 tbsp lime juice (optional, for brightness)

Optional Garnishes:

Fresh cilantro, chopped

Shredded cheese
