Oven: Preheat to 400°F (200°C).

Skillet: Heat over medium.

Make Cajun butter mix:

In a small bowl, combine melted butter, olive oil, Cajun seasoning, garlic powder, smoked paprika, salt, and pepper.

Coat the corn:

Brush the corn generously with the Cajun butter mixture on all sides.

Cook:

Skillet: Place in a hot skillet and rotate until charred and tender (10–12 minutes).

Oven: Bake on a lined tray for 20–25 minutes, turning halfway.

Add cheese:

Sprinkle mozzarella over each ear during the last 5 minutes of cooking. Let it melt and get bubbly.

Optional: sprinkle Parmesan for an extra cheesy layer.

Garnish and serve:

Sprinkle with chopped parsley or cilantro.

Serve hot with lime wedges or extra Cajun butter on the side.

🔥 Pro Tips:

Want a creamier finish? Add a drizzle of spicy mayo or ranch over the top.

To make it Mexican-style, add Cotija cheese and lime juice for a Cajun elote twist.
