Green Chile Ground Beef & Cheese Stacked Enchiladas

Instructions:

1. Cook the Ground Beef:

In a skillet, sauté onions in a bit of oil until translucent.

Add ground beef, garlic powder, salt and pepper. Cook until browned. Drain excess fat and set aside.

2. Make the Green Chile Sauce:

In a saucepan, heat oil or butter and stir in flour to form a roux.

Stir constantly for 1 minute, then slowly add broth.

Add chopped green chiles, cumin, and salt.

Simmer for 10–15 minutes until thickened.

3. Fry the Tortillas:

Lightly fry each tortilla in oil just until pliable. Drain on paper towels.

4. Assemble the Stack (for each serving):

On an oven-safe plate or dish:

Spread a spoonful of green chile sauce.

Add a tortilla.

Top with beef, sauce, and cheese.

Repeat for 3–4 layers.

Finish with lots of cheese and a drizzle of sauce.

5. Bake:

Bake at 375°F (190°C) for 10–15 minutes, or until cheese is fully melted and bubbling.

🌮 Pro Tips:

Use freshly roasted Hatch green chiles if available — they’re worth it!

You can make a whole casserole dish of these by layering like lasagna and baking.
