Mexican Red Enchilada Double Cheeseburger

Instructions:

1. Make the Enchilada Sauce:

In a saucepan, heat oil over medium heat.

Whisk in flour and stir constantly for 1 minute to make a roux.

Add chili powder, cumin, garlic & onion powder, oregano.

Gradually whisk in the beef broth until smooth.

Simmer 10 minutes until thickened. Salt to taste.

2. Cook the Burger Patties:

Form 4 thin patties. Season both sides with salt and pepper.

Heat a skillet or grill over high heat and cook patties ~2-3 minutes per side.

Add cheese on top of each patty during the last 30 seconds.

3. Toast the Buns:

Butter the insides of the buns and toast on a skillet until golden.

4. Assemble the Burger:

Bottom bun → smear of mayo or crema.

First patty → spoon of enchilada sauce.

Second patty → more enchilada sauce.

Sprinkle chives or green onion.

Top bun and a little sauce drizzled on top for extra flair.

Serve with fries and a side of guacamole or elote (Mexican street corn)!
