Ingredients:

Main:

3 lbs potatoes (Yukon gold or russet), thinly sliced

2 cups shredded Mexican cheese blend (cheddar, Monterey Jack, etc.)

1 cup roasted green chiles, chopped (Hatch preferred)

1/2 cup onion, finely diced

3 tbsp butter

2 tbsp flour

2 cups milk (or half & half for creamier)

Salt & pepper to taste

1/2 tsp cumin

1/4 tsp garlic powder

Optional: pinch of smoked paprika or chili powder
