Green Chile Cheese Scalloped Potatoes

Instructions:
Preheat oven to 375°F (190°C). Grease a 9×13 baking dish or cast iron skillet.
Prepare cheese sauce:
In a saucepan, melt butter. Add onions and cook until soft.
Stir in flour and whisk for 1 minute.
Gradually add milk, whisking constantly.
Add cumin, garlic powder, salt, pepper, and half of the cheese.
Stir until smooth and melted.
Layer the dish:
Add a layer of sliced potatoes.
Sprinkle some green chiles.
Pour a bit of cheese sauce over.
Repeat layers until ingredients are used up.
Top with remaining cheese.
Cover with foil and bake for 40 minutes.
Uncover and bake another 20–25 minutes, until bubbly and golden.
Let rest 10 minutes before serving.
