Green Chili Ground Beef Egg Rolls

Instructions:

Cook the beef:
In a skillet, brown the ground beef with chopped onion until fully cooked. Drain excess grease.

Season and mix:
Add garlic powder, cumin, paprika, salt, and pepper. Stir in green chiles, cheese, and refried beans if using. Cook for 2 more minutes, then remove from heat and let cool slightly.

Assemble the egg rolls:
Place a spoonful of the filling on an egg roll wrapper. Fold in the sides, then roll tightly. Seal the edge with a bit of beaten egg.

Fry:
Heat oil to 350°F (175°C). Fry egg rolls in batches for 3–4 minutes or until golden brown. Drain on paper towels.

Serve:
Enjoy with salsa verde, sour cream, or avocado ranch dipping sauce!
