Chiles Rellenos Cornbread

🔥 Instructions:

Preheat & Prep:

Preheat oven to 375°F (190°C).

Grease a cast iron skillet or 8×8 baking dish.

Mix Dry Ingredients:

In a bowl, whisk together cornmeal, flour, baking powder, baking soda, salt, and cumin.

Mix Wet Ingredients:

In a separate bowl, whisk buttermilk, eggs, melted butter, and honey/sugar.

Combine & Layer:

Add wet ingredients into dry, mix just until combined.

Pour half the batter into the skillet/dish.

Layer sliced green chiles, cheese, and onion.

Pour remaining batter over the top, spreading gently.

Top & Bake:

Sprinkle more cheese on top.

Bake for 25–30 minutes, or until golden brown and a toothpick comes out clean.

Cool & Serve:

Let it cool for 5–10 minutes before slicing.

Serve warm with sour cream or salsa on the side.

💡 Pro Tip:

Add cooked chorizo or ground beef between the layers for a heartier version!
