A spicy, cheesy baked pasta dish with roasted green chile flair
Ingredients:
12 oz penne or rigatoni pasta
2 tablespoons butter
2 tablespoons flour
2 cups milk (whole or 2%)
1 ½ cups shredded cheddar cheese
1 cup shredded Monterey Jack or mozzarella cheese
1 tsp garlic powder
Salt and pepper to taste
½ tsp cumin (optional)
1 cup roasted green chiles (Hatch or Anaheim), chopped
½ cup chopped tomatoes or red bell pepper (optional)
½ cup cooked bacon or chorizo (optional for added protein)
