Instructions

1. Marinate the Carne Asada:

In a bowl, combine olive oil, lime juice, garlic, cumin, chili powder, smoked paprika, oregano, salt, and pepper.

Add the steak, coating it evenly. Cover and marinate in the refrigerator for at least 30 minutes, or up to 2 hours.

2. Prepare the Fries:

Preheat your oven to 425°F (220°C).

Spread the fries in a single layer on a baking sheet. Bake according to package instructions (or until golden and crispy, about 20-25 minutes), seasoning with smoked paprika halfway through.

Once cooked, sprinkle the shredded cheese over the fries and return to the oven for 2-3 minutes, or until the cheese is melted.

3. Grill the Carne Asada:

Preheat your grill to medium-high heat (about 400°F/200°C).

Remove the steak from the marinade and grill for 4-5 minutes per side for medium-rare (135°F/57°C internally), or to your desired doneness.

Let the steak rest for 5 minutes, then chop into bite-sized pieces.

4. Make the Guacamole:

In a bowl, mash the avocados with a fork until smooth but slightly chunky.

Stir in the tomato, red onion, jalapeño (if using), lime juice, cilantro, and salt. Mix well and set aside.

5. Assemble the Loaded Fries:

Transfer the cheesy fries to a serving tray.

Top with the chopped carne asada, a drizzle of Mexican crema or sour cream, diced white onion, and a large scoop of guacamole.

Garnish with fresh cilantro, if desired.

Serving Suggestion:

Serve immediately while the fries are hot, with extra lime wedges on the side for squeezing. Pair with a cold drink like a Mexican lager or agua fresca.
