Mexican Grilled Chicken Tacos with Green Salsa

Ingredients (Serves 4)

For the Grilled Chicken:

1.5 lbs (680g) boneless, skinless chicken thighs (or breasts)

2 tbsp olive oil

1 tbsp lime juice

2 cloves garlic, minced

1 tsp ground cumin

1 tsp chili powder

1/2 tsp smoked paprika

1/2 tsp dried oregano

Salt and black pepper, to taste

For the Green Salsa (Salsa Verde):

6 tomatillos, husked and rinsed

1-2 jalapeños (adjust for spice preference), stemmed

1/2 small white onion, quartered

2 cloves garlic, peeled

1/2 cup (20g) fresh cilantro, chopped

1 tbsp lime juice

Salt, to taste

For the Tacos:

8 small corn tortillas

1/2 small white onion, finely diced

1/2 cup (20g) fresh cilantro, chopped

Lime wedges, for serving
