Migas with Chorizo

Ingredients (Serves 4)

For the Migas:

6 large eggs

1/4 cup milk

1/2 tsp salt

1/4 tsp black pepper

1/2 lb (225g) Mexican chorizo, casing removed

1 small onion, finely diced

1 jalapeño, seeded and finely diced (optional, for heat)

1 cup diced tomatoes (or 1/2 can diced tomatoes, 14.5 oz)

1 tsp ground cumin

4 cups tortilla chips (or 6 corn tortillas, cut into triangles and fried until crispy)

1 tbsp vegetable oil (if needed)

1/2 cup shredded cheddar or Mexican blend cheese (optional)

1/4 cup fresh cilantro, chopped (for garnish)
