👩‍🍳 Instructions:

1️⃣ Prepare the Carne de Chinameca:

In a bowl, mix guajillo chile puree, achiote paste, garlic, vinegar, salt, and pepper.

Coat the thin beef slices with the marinade and let sit for at least 2 hours (overnight for deeper flavor).

If using a smoker, set up your grill with wood chips or banana leaves and smoke the meat over low heat for 1-2 hours.

If grilling or pan-searing, cook over medium-high heat for 3-4 minutes per side, until charred and slightly crispy.

2️⃣ Make the Refried Beans:

Heat lard or oil in a pan over medium heat.

Sauté onions until golden, then add the cooked black beans and mash them.

Stir in bean broth, season with salt, and cook until thickened.

3️⃣ Fry the Plantains:

Heat oil in a pan over medium heat.

Fry the plantain slices until golden brown, about 2 minutes per side.

Drain excess oil and drizzle with Mexican crema.

4️⃣ Serve & Enjoy!

Plate the Carne de Chinameca with refried black beans and fried plantains.
