🛒 Ingredients:
For the Tegogolos (Freshwater Snails):
2 lbs tegogolos (freshwater snails), cleaned and cooked
4 cups water
1 bay leaf
1 clove garlic
½ tsp salt
For the Ceviche:
3 Roma tomatoes, finely chopped
½ white onion, finely diced
½ cup fresh cilantro, chopped
1 serrano or jalapeño pepper, finely minced (optional for heat)
Juice of 5 limes
1 tbsp olive oil
½ tsp salt (or to taste)
¼ tsp black pepper
¼ tsp oregano
1 tbsp soy sauce (optional for depth of flavor)
