2 lbs thinly sliced beef (flank, top sirloin, or round steak)
3 guajillo chiles, soaked and blended
1 tbsp achiote paste (for the red color)
2 cloves garlic, minced
1 tbsp white vinegar
1 tsp salt
½ tsp black pepper
1 tbsp vegetable oil
Wood chips or banana leaves (if smoking traditionally)
For the Refried Black Beans:
2 cups cooked black beans
1 tbsp lard or vegetable oil
¼ cup onion, finely chopped
¼ tsp salt
½ cup bean broth
For the Fried Plantains:
2 ripe plantains, sliced lengthwise
