Directions:

Prepare the Corn Mixture:

Place the corn kernels in a blender or food processor and blend until smooth but still slightly chunky for texture.

In a mixing bowl, beat the softened butter with the sugar until light and fluffy. This will help the tamales to be fluffy and sweet.

Add the blended corn to the butter mixture and mix well.

Mix the Masa:

In a separate bowl, combine the masa harina, baking powder, and salt.

Gradually add the dry ingredients to the corn mixture, alternating with the milk, mixing until you have a smooth, creamy batter. The mixture should be thick but spreadable. Add a bit more milk if needed.

Assemble the Tamalitos:

Take a soaked corn husk and shake off excess water. Spread about 2-3 tablespoons of the corn mixture in the center of the husk.

Fold the sides of the husk toward the center, then fold the narrow end up to enclose the tamalito. Repeat with the remaining corn mixture and husks.

Steam the Tamales:

Set up a steamer with water and bring to a simmer. Place the tamales upright in the steamer with the open ends facing up.

Cover the tamales with a damp cloth or extra corn husks, then cover with the steamer lid.

Steam for about 45-60 minutes, or until the tamales are firm and the husk peels away easily from the masa. Check the water level occasionally and add more if needed to prevent burning.

Serve:

Allow the tamales to cool slightly before serving. They can be enjoyed as is or with a sprinkle of sugar and cinnamon for extra sweetness.

These Tamalitos de Elote are soft, sweet, and filled with the natural flavor of corn. Perfect for enjoying with a cup of coffee or as a sweet treat after a meal. ¡Disfruta! 🌽✨
