Homemade Carnitas Casserole

Instructions:

1. Prep & Season

Pat pork chunks dry with paper towels.

In a large bowl, toss pork with salt, pepper, and cumin until evenly coated.

2. Slow Cook the Pork

Oven Method:

Preheat oven to 300°F (150°C).

Place pork in a large Dutch oven or oven-safe pot.

Add onion, garlic, bay leaves, oregano, cinnamon (if using), orange juice, lime juice, chicken broth, and chipotles.

Cover and bake for 3–3½ hours, until pork is fork-tender.

Slow Cooker Method:

Add all ingredients to the slow cooker.

Cook on LOW for 8–10 hours or HIGH for 5–6 hours.

3. Shred & Broil

Remove pork from the cooking liquid and shred into large chunks.

Strain and reserve about 1 cup of the cooking liquid.

Spread pork on a foil-lined baking sheet.

Drizzle a bit of the reserved cooking liquid over the pork.

Broil on HIGH for 5–7 minutes, turning halfway and basting with more liquid, until crispy edges form.

4. Serve

Serve hot in:

Tacos with cilantro, onions, and salsa

Burritos or nachos

On rice with beans

Tip for Maximum Flavor: Before broiling, toss the pork with a spoonful of its rendered fat from the top of the cooking liquid for richer, juicier carnitas.
