Slow Cooker Pork Chile Verde

Instructions:

Step 1: Sear the Pork

Season pork chunks generously with salt, pepper, cumin, garlic & onion powder.

Heat olive oil in a skillet and brown the pork on all sides (optional but adds flavor).

Transfer pork to the slow cooker.

Step 2: Make the Green Sauce

In a saucepan, boil the tomatillos and jalapeños until soft (about 8–10 minutes).

Blend tomatillos, jalapeños, roasted green chiles, onion, garlic, cilantro, oregano, cumin, and chicken broth until smooth.

Step 3: Slow Cook

Pour the green sauce over the pork in the slow cooker.

Cook on LOW for 8 hours or HIGH for 4–5 hours, until the pork is fall-apart tender.

Shred the meat in the sauce and stir in lime juice.

Serving Ideas:

In warm flour or corn tortillas with onions, cilantro, and crema

Over Mexican rice

In burritos or enchiladas

With a side of refried beans and chips
