1/2 lb (225g) Mexican chorizo, casing removed
1 cup roasted green chiles, peeled and chopped (Hatch or Anaheim preferred)
2 cups shredded Oaxaca cheese (or mozzarella/Monterey Jack blend)
1 cup shredded cheddar cheese (optional for extra depth)
1/4 cup white onion, finely chopped (optional)
1 tbsp oil or lard (if needed)
