For the Green Chile Sauce:
1 tbsp olive oil or butter
½ onion, diced
2 cloves garlic, minced
1½ cups roasted green chiles, chopped (or 1 can diced Hatch green chiles)
1 cup sour cream
¾ cup chicken broth
½ tsp cumin
Salt to taste
To Assemble:
8–10 corn tortillas (or flour tortillas if preferred)
1½ cups shredded cheese (for topping)
Fresh cilantro (optional, for garnish)
