Ingredients:
For the Red Chile Sauce:
5–6 dried guajillo or New Mexico red chiles (stems & seeds removed)
2 cloves garlic
¼ tsp cumin
¼ tsp Mexican oregano
Salt to taste
2 cups water (for boiling chiles)
1 tbsp oil
For the Filling:
2 cups shredded Mexican cheese (queso Chihuahua, Oaxaca, or cheddar blend)
1 medium white onion, finely chopped
Salt to taste
For Assembly:
10–12 corn tortillas
Oil (for lightly frying tortillas)
Extra sauce for topping
