Instructions:

Brown the Beef:

In a large pot, heat oil over medium-high heat.

Add ground beef and break it up with a spoon.

Season with salt, pepper, and cumin. Cook until browned. Drain excess fat if needed.

Sauté the Veggies:

Add diced onion and garlic to the pot. Sauté 2–3 minutes until fragrant.

Stir in chopped tomatoes and cook another 2–3 minutes.

Add Rice and Liquid:

Pour in rinsed rice and stir well.

Add water or broth and bring to a boil.

Simmer:

Reduce heat to low, cover, and simmer 20–25 minutes, or until rice is tender and the soup is slightly thickened.

Taste and Adjust:

Add more salt if needed. For a touch of spice, toss in a diced jalapeño or serrano while sautéing.

For more richness, stir in a spoonful of tomato paste with the tomatoes.

Serve with warm tortillas, lime, and a sprinkle of chopped cilantro.
