Ingredients:
For the base:
4โ5 Hatch Big Jim green chiles, roasted and peeled
1 tbsp olive oil
2 corn tortillas
1/2 cup shredded Mexican cheese blend (or mozzarella + cheddar)
1/2 cup Oaxaca cheese or mozzarella slices
Cast iron skillet (small)
For the salsa roja:
4 medium ripe tomatoes
2 cloves garlic
1/4 onion
1 tbsp vegetable oil
Salt to taste
Optional: 1 dried chile de รกrbol (for heat)
