Green Chile Chicken & Onion Enchiladas

Instructions:

1. Prepare the Sauce:

In a saucepan, melt butter and whisk in flour to make a roux.

Gradually stir in chicken broth, green chile salsa, garlic powder, and bring to a simmer.

Cook until slightly thickened (5–7 min). Set aside.

2. Make the Filling:

In a bowl, mix shredded chicken, HALF of the diced onions, green chiles, 1 cup cheese, cumin, salt, and pepper.

3. Soften the Tortillas:

Lightly heat tortillas on a skillet or microwave to make them pliable.

4. Assemble:

Preheat oven to 375°F (190°C).

Spread a thin layer of sauce on the bottom of a greased baking dish.

Fill each tortilla with chicken filling, roll, and place seam-side down.

Pour remaining sauce over enchiladas.

Top with extra cheese and the remaining diced onions.

5. Bake:

Cover with foil and bake for 20 minutes.

Remove foil and bake an additional 10 minutes until bubbly and golden.

Add sour cream to the filling for a creamier texture.
