Apple Empanadas recipe

👩🍳 Instructions:
1. Make the Dough:
In a large bowl, whisk flour, sugar, and salt.
Cut in the butter with a pastry cutter or fingers until the mixture is crumbly.
In a small bowl, whisk egg, vanilla, and ice water.
Add wet ingredients to flour mixture and mix until dough comes together (add a bit more water if needed).
Divide dough in two, shape into disks, wrap in plastic, and chill for at least 30 minutes.
2. Make the Apple Filling:
In a saucepan over medium heat, combine diced apples, both sugars, cinnamon, cloves, lemon juice, and cornstarch.
Cook for 5–7 minutes until apples are tender and mixture thickens. Cool completely.
3. Assemble the Empanadas:
Preheat oven to 375°F (190°C).
Roll out dough on a floured surface and cut into 4–5 inch circles.
Place a spoonful of apple filling in the center of each circle.
Fold over into a half-moon and press edges to seal (use a fork or twist with fingers).
Place on a parchment-lined baking sheet.
4. Bake:
Brush tops with egg wash.
(Optional) Sprinkle with cinnamon sugar.
Bake for 20–25 minutes or until golden brown.

You can freeze filled unbaked empanadas for later — just bake from frozen with a few extra minutes.
