For the Dough:

2 ½ cups all-purpose flour

1 tbsp granulated sugar

1 tsp salt

1 cup (2 sticks) cold unsalted butter, cubed

1 egg

¼ cup ice water (plus more if needed)

1 tsp vanilla extract

For the Apple Filling:

3 medium apples (Granny Smith or Gala), peeled and diced

¼ cup brown sugar

¼ cup granulated sugar

1 tsp ground cinnamon

⅛ tsp ground cloves (optional)

1 tbsp lemon juice

1 tbsp cornstarch

For Assembly:

1 egg (beaten, for egg wash)

Cinnamon sugar (optional, for topping)
