Ingredients:

12 corn tortillas

3 cups shredded cheddar cheese (or Mexican blend)

1 small white onion, finely chopped

Oil (for softening tortillas)

Optional: extra cheese for topping

For the Red Enchilada Sauce:

3 tablespoons all-purpose flour

3 tablespoons chili powder

1/2 teaspoon garlic powder
