Prepare the Tortillas:
Lightly fry corn tortillas in a bit of oil until golden but still pliable. Set on paper towels.
Fry the Eggs:
In a nonstick skillet, cook eggs to your liking (sunny-side-up is traditional).
Assemble Huevos Rancheros:
Spread warm refried beans on tortillas (optional).
Top each with a fried egg.
Spoon warm ranchero sauce over the eggs.
Sprinkle cheese on top — let it melt slightly from the heat.
Add fresh toppings like lettuce, tomato, avocado, or onion.
