π¨βπ³ Instructions:
1. Make the Tomato Sauce
Blend tomato, onion, garlic, and a bit of salt with Β½ cup of the broth until smooth.
2. Toast the Fideo
In a skillet, heat the oil and add the fideo.
Toast until golden brown, stirring constantly so it doesnβt burn.
3. Add Sauce & Simmer
Carefully pour in the blended sauce and remaining broth.
Simmer on low for about 10β12 minutes until noodles are tender and sauce thickens.
4. Fry the Egg
In a small pan, heat a little oil or butter.
Crack in the egg and cook sunny side up. Season with salt and pepper.
5. Assemble Your Plate
Serve the fideo on a plate, sprinkle with shredded cheese.
Top with the sunny-side-up egg.
Warm your tortilla and enjoy it on the side.

Add a few drops of salsa macha or chile oil on the egg for a spicy twist!
