Pinto Bean Soup with Bacon and Chorizo

👨‍🍳 Instructions:

Step 1: Cook the Meat

In a large pot, cook bacon until crisp. Remove and set aside.

In the same pot, add chorizo and cook until browned. Drain excess fat if needed.

Step 2: Sauté Veggies

Add onion, garlic, bell pepper, and tomato to the pot. Sauté until softened, about 5 minutes.

Step 3: Add Beans & Broth

Stir in cooked pinto beans, cumin, smoked paprika, and broth. Bring to a simmer.

Step 4: Simmer to Blend Flavors

Simmer uncovered for 20–30 minutes until soup thickens slightly. Add bacon back in. Season to taste.

Step 5: Serve

Ladle into bowls and garnish with cilantro and a squeeze of lime.

💡 Pro Tip:
To make it extra hearty, mash a few beans in the pot or add a handful of diced potatoes while simmering.
