These golden empanadas are stuffed with roasted Hatch green chiles and gooey cheese—crispy on the outside, melty and savory on the inside. Perfect for dipping in guac or salsa verde!
📌 Ingredients:
For the Dough (or use store-bought empanada wrappers):
2½ cups all-purpose flour
1/2 tsp salt
1/2 cup cold butter (cut into cubes)
1 egg
1/3–1/2 cup cold water
For the Filling:
1 cup roasted Hatch green chiles (peeled, seeded, chopped)
1½ cups shredded Monterey Jack or Oaxaca cheese
1/2 tsp garlic powder
1/4 tsp cumin
Salt & pepper to taste
Optional: 1/4 cup sautéed onions or cooked chorizo
For Assembly:
1 egg (beaten, for egg wash)
Oil (for brushing or frying)
