Chuy’s Creamy Jalapeño Dip

Instructions

1. Cook the Meat (if using):

In a large skillet, cook the ground beef or chorizo over medium heat, breaking it apart with a spoon, until browned, about 5-7 minutes. Drain excess fat.

Add the diced onion, jalapeños, and garlic, cooking for 3-4 minutes until softened. If skipping the meat, start with this step and use 1 tbsp of vegetable oil to sauté the vegetables.

2. Melt the Cheese:

Add the diced tomatoes with green chiles to the skillet, stirring to combine.

Reduce the heat to low and add the cubed processed cheese, heavy cream, cumin, chili powder, salt, and black pepper.

Stir constantly until the cheese is fully melted and the mixture is smooth, about 5-7 minutes.

3. Adjust and Finish:

Taste and adjust seasoning with more salt, pepper, or jalapeños if desired.

If the dip is too thick, add a splash of heavy cream to reach your desired consistency.

4. Serve:

Transfer the dip to a serving bowl and garnish with chopped cilantro if desired.

Serve warm with tortilla chips for dipping.

Notes

For a vegetarian version, skip the meat and add extra jalapeños or diced bell peppers for more texture.

You can substitute the processed cheese with a mix of shredded cheddar and cream cheese, though the texture may vary.
