π Ingredients (Serves 4)
For the Beef:
2 lbs chuck roast, cut into 1.5-inch cubes
2 tbsp olive oil
1 tbsp smoked paprika
1 tbsp ground cumin
1 tsp garlic powder
1 tsp onion powder
1 tsp dried oregano
Salt & black pepper, to taste
For the Mexican BBQ Sauce:
1/2 cup tomato sauce
1/4 cup beef broth
2 tbsp adobo sauce (from canned chipotle peppers)
1 chipotle pepper in adobo, minced
2 tbsp honey
1 tbsp lime juice
1 tsp smoked paprika
1 tsp ground cumin
Salt, to taste
For Garnish:
Fresh cilantro, chopped
Lime wedges
