π Ingredients (Serves 4)
For the Steak:
1 lb flank or skirt steak, sliced into thin strips
2 tbsp olive oil
1 tbsp chili powder
1 tsp garlic powder
1 tsp cumin
1/2 tsp smoked paprika
Juice of 1 lime
Zest of 1 lime
Salt & black pepper, to taste
For the Fajita Filling:
1 red bell pepper, sliced
1 green bell pepper, sliced
1 medium onion, sliced
1 tbsp olive oil
Salt & black pepper, to taste
For the Quesadillas:
4 large flour tortillas
2 cups shredded Mexican cheese blend (or cheddar and Monterey Jack)
1/4 cup fresh cilantro, chopped (optional)
For Serving:
Lime wedges
Sour cream or salsa (optional)
