1. Make the Steak Filling:
In a skillet, heat olive oil over medium-high heat. Add chopped steak and onions.
Season with chili powder, cumin, garlic powder, salt & pepper. Cook until steak is browned and tender. Set aside.
2. Roll the Taquitos:
Warm tortillas slightly (so they roll easier). Add a spoonful of steak filling to each one and roll tightly.
Secure with a toothpick if needed.
3. Fry to Perfection:
Heat oil in a skillet over medium heat. Fry taquitos seam-side down until golden brown and crispy. Drain on paper towels.
4. Make the Cheese Sauce:
In a saucepan, melt butter over medium heat. Whisk in flour and cook for 1 minute.
Slowly whisk in milk and cook until slightly thickened. Stir in cheese, garlic powder, and salt. Cook until melted and smooth.
5. Make the Pico & Guac:
For pico, combine all ingredients in a bowl and mix well.
For guac, mash avocados and mix in onion, lime juice, garlic, salt & pepper.
6. Assemble & Serve:
