Carne en Salsa Roja con Nopales y Frijoles

🔥 Instructions:

1️⃣ Prepare the Nopales

Bring a pot of water to boil. Add nopales, salt, bay leaf, and baking soda.

Boil for about 10 minutes until the nopales turn dark green and lose their slimy texture.

Drain, rinse with cold water, and set aside.

2️⃣ Make the Salsa Roja

Blend tomatoes, chile guajillo, chipotle, garlic, cumin, and oregano until smooth.

In a pan, heat oil and sauté the onion until soft.

Pour in the blended sauce and let it simmer for 5 minutes.

Add cooked beef, season with salt and pepper, and simmer for 10 more minutes.

3️⃣ Prepare the Beans

Heat lard or oil in a pan.

Add the cooked beans and mash them until smooth.

Cook for 5 minutes, stirring occasionally.

4️⃣ Serve & Enjoy!

Plate the Carne en Salsa Roja with nopales and refried beans. Serve with warm corn tortillas and queso fresco on top.
