Mexican Pastel de Carne (Bacon-Wrapped Meatloaf)
Directions:
Preheat Oven:
Preheat your oven to 350°F (175°C).
Prepare Meatloaf Mixture:
In a large bowl, combine the ground meat, breadcrumbs, eggs, milk, chopped onion, minced garlic, cilantro, bell pepper, grated cheese (if using), cumin, paprika, salt, and pepper.
Mix everything thoroughly until all ingredients are well combined.
Shape the Meatloaf:
Place the meat mixture into a loaf pan or a baking dish. Press down to form a loaf shape.
Add Bacon Topping:
Lay the bacon strips over the top of the meatloaf, tucking them slightly under the loaf to secure them. The bacon should cover the top and sides of the meatloaf.
Bake:
Place the meatloaf in the preheated oven and bake for 1 hour or until the bacon is crispy and the meatloaf is cooked through. You can use a meat thermometer to ensure it reaches an internal temperature of 160°F (70°C).
Serve:
Let the meatloaf rest for a few minutes before slicing. Serve warm with sides like mashed potatoes, rice, or a fresh salad.
This Mexican Pastel de Carne will have a beautiful bacon crust on top, adding smokiness and a delightful crunch to each slice. Perfect for family gatherings or a cozy dinner!
