Mexican Pastel de Carne (Bacon-Wrapped Meatloaf)

Ingredients:

For the Meatloaf:

2 lbs ground beef (or a mix of beef and pork)

1 cup breadcrumbs

2 eggs

1/2 cup milk

1/2 onion, finely chopped

2 garlic cloves, minced

1/4 cup chopped cilantro

1/2 cup bell pepper, finely chopped

1/2 cup grated cheese (optional)

1 tsp cumin

1 tsp smoked paprika

Salt and pepper to taste

Topping:

8–10 slices of bacon (enough to cover the top of the meatloaf)
