Classic Mexican Taco Soup

This recipe perfectly captures the rich, tomato-based broth packed with beans, corn, and ground beef, finished with all the fresh toppings seen in the bowl.

Ingredients:

For the Soup:

1 lb (450g) ground beef (or ground turkey)

1 medium yellow onion, diced

2 cloves garlic, minced

1 packet (about 3 tbsp) taco seasoning (or a mix of chili powder, cumin, oregano, and paprika)

1 can (15 oz) black beans, rinsed and drained

1 can (15 oz) pinto beans or kidney beans, rinsed and drained

1 can (15 oz) sweet corn, drained (or 1.5 cups frozen corn)

1 can (14.5 oz) diced tomatoes (use tomatoes with green chilies, like Rotel, for an extra kick)

1 can (15 oz) tomato sauce or crushed tomatoes

2 to 3 cups beef broth (adjust based on how thick you like your soup)

1 tbsp olive oil

For the Toppings (As seen in the photo):

Shredded cheddar or Mexican-blend cheese

Guacamole or mashed avocado

Fresh jalapeños, sliced

Fresh cilantro, roughly chopped
