Spam & Eggs with Fried Papas, Hatch Green Chile, and Warm Flour Tortilla

Directions:

1️⃣ Fry the Papas

Heat oil in a large skillet over medium heat.

Add diced potatoes; season with salt, pepper, and smoked paprika if using.

Fry, stirring occasionally, for 20–25 minutes until golden and crispy.

2️⃣ Warm the Hatch Green Chile

In a small skillet, melt butter over medium heat.

Add chopped roasted Hatch chiles and a pinch of salt.

Warm through for 3–4 minutes.

Optional: Sprinkle with shredded cheese and let melt.

3️⃣ Cook the Spam

Heat a dry skillet or griddle over medium-high heat.

Fry Spam slices for 2–3 minutes per side until caramelized and lightly crispy.

4️⃣ Cook the Eggs

In a separate skillet, melt butter or heat oil over medium-low.

Cook eggs sunny-side up or to your preferred doneness.

Season lightly with salt and black pepper.

5️⃣ Make the Tortillas (if homemade)

Mix flour, baking powder, and salt in a bowl.

Cut in shortening/lard until crumbly.

Gradually add warm water until a soft dough forms.

Knead 3–5 minutes until smooth; rest 30 minutes.

Divide into 10 balls, roll thin, and cook on a hot dry skillet 1–2 minutes per side until golden spots appear.

6️⃣ Plate & Serve

On each plate, arrange crispy papas topped with Hatch green chile and melted cheese.

Add a generous serving of fried Spam and two eggs.

Serve with warm tortillas to scoop and wrap every bite.
