Spam & Eggs with Fried Papas and Hatch Green Chile
Ingredients:
Fried Papas
4 medium russet potatoes, scrubbed and diced small
2 tbsp vegetable oil or bacon drippings
½ tsp smoked paprika (optional)
Salt & freshly ground black pepper to taste
Hatch Green Chile Topping
1 cup roasted Hatch green chiles, peeled, seeded, and chopped
(or use canned fire-roasted green chiles if fresh aren’t available)
1 tbsp butter
Pinch of salt
Optional: ½ cup shredded cheddar or Monterey Jack cheese
Spam & Eggs
12 oz (340 g) Spam (classic or low-sodium), cut into ¼-inch slices
8 large eggs
2 tbsp butter or oil for frying
Salt & black pepper to taste
Flour Tortillas (store-bought or homemade)
If homemade:
3 cups all-purpose flour
1 tsp baking powder
1 tsp salt
⅓ cup vegetable shortening or lard
~1 cup warm water
