Ingredients:

For the Red Chile Ground Beef & Beans

1 lb (450 g) ground beef

1 cup cooked pinto beans (or canned, drained)

2 Tbsp olive oil

1 small onion, diced

3 garlic cloves, minced

2–3 Tbsp New Mexico red chile powder (or mild chili powder)

1 tsp ground cumin

1 tsp smoked paprika

1 tsp dried oregano

½ tsp salt and pepper, to taste

1 cup beef broth or water

For Topping

4 corn tortillas, warmed

4 large eggs

1 cup shredded cheddar or Mexican blend cheese

1 cup roasted Hatch green chiles (peeled, seeded, and sliced)

Optional: red pepper flakes or hot sauce
