Mexican Breakfast Tostadas

Instructions:
1. Prepare the Tostada Shells
If making homemade, fry corn tortillas in oil until golden & crispy.
Dust lightly with chili powder or tajín while warm.
2. Make the Beans
Heat refried beans with a spoonful of lard or oil.
Spread warm beans over each tostada.
Top with shredded cheese and let melt slightly.
3. Make the Guacamole
Mash avocados with lime juice, onion, and salt.
Spread a layer over the beans & cheese.
4. Scramble Eggs & Cook Bacon
Cook bacon until crisp, chop into bits.
Scramble eggs lightly with salt, set aside.
5. Make the Salsa
Roast chiles, tomatoes, and garlic until charred.
Blend with salt (and vinegar if using).
Adjust spice level to taste.
6. Assemble the Tostadas
Beans + melted cheese
Guacamole layer
Scrambled eggs
Bacon bits
Salsa drizzle
Top with diced onion, lettuce, and tomato
Finish with another spoonful of salsa 🌶️

Serve immediately while crispy! Perfect for Mexican breakfast or brunch, with coffee or agua fresca.
