Authentic Mexican Picadillo con Papas y Frijoles

Instructions:

Prepare the Sauce

Blend the tomatoes with half the onion, garlic, and a little broth until smooth. Set aside.

Cook the Meat

Heat oil in a deep skillet. Add the remaining chopped onion and sauté until translucent.

Add ground beef and cook until browned, breaking it apart with a spoon. Season with salt, pepper, cumin, and oregano.

Add Potatoes & Sauce

Stir in the diced potatoes.

Pour in the tomato sauce mixture and mix well.

Add broth to cover everything, bring to a simmer.

Simmer Until Tender

Reduce heat to medium-low and cook for about 20 minutes, until potatoes are tender. Stir occasionally to prevent sticking.

Add Beans

Stir in the cooked pinto beans and let simmer for another 5 minutes so the flavors meld.

Taste & Serve

Adjust seasoning with salt and pepper.

Garnish with cilantro if you like.

Serve hot with fresh flour tortillas on the side.

Tips & Variations

Add carrots or peas for more veggies.

Swap beef for ground turkey or pork.

Make it spicier with chipotle in adobo sauce.

For extra richness, add a splash of beer when simmering the sauce.
