Cheesy Stuffed Poblano & Beef Burrito with Mexican Rice

Ingredients:

For the Beef Filling

500g (1 lb) ground beef

1 medium onion, finely chopped

2 cloves garlic, minced

1 tsp cumin

1 tsp smoked paprika

1 tsp chili powder

½ tsp oregano

Salt & pepper to taste

2 tbsp tomato paste

½ cup beef broth or water

For the Poblanos

2 large poblano peppers, halved lengthwise and deseeded

Olive oil for brushing

Pinch of salt

For the Mexican Rice

1 ½ cups long-grain rice

3 cups chicken broth

½ cup tomato sauce or blended tomatoes

1 small onion, minced

1 clove garlic, minced

½ tsp cumin

½ tsp paprika

Salt to taste

2 tbsp oil

For Assembly

2–3 large burrito-size flour tortillas

1–1 ½ cups shredded mozzarella or Oaxaca cheese (for stretchiness)

Sour cream (optional)
