Instructions:
Cook the beef:
In a skillet over medium heat, cook the ground beef until browned.
Drain excess fat, then add onion and garlic. Sauté until soft.
Add chili powder, cumin, paprika, salt, pepper, and tomato paste if using.
Pour in a splash of beef broth or water to deglaze and make it juicy. Let simmer for 5–10 minutes.
Prepare the tortillas:
Warm corn tortillas slightly so they don’t break.
Add a sprinkle of cheese and a spoonful of the beef filling to half of each tortilla.
Fold them in half like quesadillas.
Crisp the tacos:
In a pan over medium heat, add a bit of butter or oil.
Cook each taco on both sides until golden brown and crispy, and the cheese is melty.
Serve hot with lime wedges, avocado, crema, and salsa!
