Green Chile Queso Fundido with Chorizo

Instructions:

1. Cook the Chorizo:

In a cast-iron skillet over medium heat, cook the chorizo until browned and fully cooked (5–7 minutes).

Use a spoon to break it up into crumbles.

Remove with a slotted spoon and set aside (leave some fat in the pan for flavor).

2. Sauté Onion (Optional):

If using onion, sauté it in the remaining fat until soft and translucent.

3. Add Green Chiles:

Stir in chopped green chiles and cook for 2–3 minutes to release flavor.

4. Layer the Cheese:

Lower the heat. Add half the cheese mixture, then layer the chorizo and remaining cheese on top.

Let it melt slowly on the stovetop or transfer to a 425°F (220°C) oven and bake for 10 minutes until bubbling and golden on top.

5. Serve Immediately:

Garnish with extra green chiles or cilantro if desired.

Scoop with tortillas or chips while hot and melty!

💡 Tips:

Don’t overbake: just melt and brown the top.

You can use poblano peppers for a milder flavor.

Turn it into tacos or burritos by scooping it into warm tortillas.
