Instructions:
1. Sauté:
In a large pot, heat olive oil and sauté onion until soft. Add garlic and cook for 30 seconds.
2. Build the Flavor:
Stir in green chiles, corn, beans, shredded chicken, and seasonings. Mix well.
3. Simmer:
Add chicken broth and bring to a low boil. Simmer for 15–20 minutes so flavors meld.
4. Make it Creamy:
Lower the heat and stir in sour cream and heavy cream. Simmer gently (don’t boil!) for another 5 minutes.
5. Finish:
Stir in chopped cilantro, adjust seasoning if needed, and serve hot!
