Crispy on the outside, melty and bold on the inside! These empanadas are stuffed with juicy hamburger, roasted green chiles, beans, and cheese—a true Mexican comfort food fusion!

Ingredients:

For the Filling:

1/2 lb ground beef

1/2 cup refried beans (or whole pinto beans)

1/2 cup roasted green chile (Hatch or Anaheim), chopped

1 cup shredded cheese (Monterey Jack or cheddar)

1/4 cup diced onion (optional)

Salt, pepper, cumin to taste

For the Dough (or Shortcut):

Empanada dough rounds or refrigerated pie crusts

1 egg (for egg wash)

Optional for Serving:

Mexican rice

Lettuce, tomato, sour cream

Salsa or guacamole
